Creamy Sweet Potatoes with Almond Butter

1 medium sized sweet potato, baked
1 TB orange juice
2 TB light brown sugar
½ tsp. cinnamon
pinch nutmeg
1 TB creamy almond butter

Peel and chop the sweet potato. Blend in a food processor along with the orange juice, brown sugar, cinnamon, and nutmeg, until creamy and smooth. Heat gently on the stove or in the microwave. Stir in the almond butter until well-incorporated. Makes 2 servings.

love this but don't suggest the microwave!!! it's sooo bad for you. true it's fast, but it defeats a lot of the purpose of being a vegan in the first place!! :D oh, but your blog is just wonderful!

I need to start doubling or tripling this recipe when I make it. My household consists of me, my husband, our toddler, and my 90-year-old mother-in-law. Every time I make this dish it is gone in a flash. Not only is this a hit across intergenerational palates, but it serves the nutritional needs for those with growing bones and osteoporosis alike!

Hi Jennifer,

Do you use any rice or soy cheese in recipes? I made a good "creamed" spinach the other night using soy mozzarella, veggie Parmesan and a dollop of "benechol". I didn't measure anything out, just dumped in enough cheese to cover the dish of spinach and as little butter substitute as it would take to thin out the cheese a little bit. Then stirred it all up after it was hot and cheese melted (I used the microwave, but would probably use oven if I was making for a larger group) My almost 2 yr old who eats a very limited variety of veggies ate his whole portion and even had seconds (literally a miracle!) Just thought I would share.
